Treat your loved one to Strawberries and Chocolate this Valentines Day. If you desire to have Chocolate covered strawberries, melt 1 cup of Dark Chocolate Chips in a saucepan, and dip Fresh Strawberries in the melted Chocolate, set on Parchment paper and let Dry.
You don't even have to melt the Chocolate! It still has the same effect. :-)
This Valentines Day Dinner is for the whole family! Who does not love Pizza. This particular pizza is kid tested and approved! I made two the other night, while my daughter had a friend over. The girls ate it and loved it. The next day we only had two pieces left over, which everyone fought over!
- 2 cups almond flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 2 teaspoon oregano
- 2 teaspoon garlic powder
- 1 teaspoon basil
- 2 egg
- 1/4 cup of Parmesan cheese (or another hard cheese, grate finely)
- 3 tablespoons olive oil
- Mozerella Cheese
- and toppings of choice
- Tomato sauce of choice
Preheat oven to 350 degrees. Form Pizza on parchment paper.
In a large bowl mix all dry ingredients together.
Then add all the wet ingredients.
Spread the dough in a circle on the parchment paper with a spatula or hands.
Pre-bake the dough in the preheated 350 degree oven for 10-12 minutes until they are golden brown.
Add toppings and bake an additional 5 to 10 minutes until your toppings are cooked through or melted.
Serve and Enjoy this guilt Free Pizza!

Did you know that Chocolate is a super food? Chocolate has tremendous health benefits that can not be ignored. So Eat up! Eat for your heart, eat for your memory, eat it for your health!
- About 1 cup of Olive oil, give or take.
- 1 cup of Cocoa Powder
- 12 eggs or equivalent egg substititute.
- 1/2 cup of Agauve
- 1/2 cup of brown sugar
- 1 tsp of Vanilla extract
- 1 cup of Coconut Flour ( Lets Do… Organic)
- hand full of chocolate chips and walnuts if desired.
Cranberry Balsamic Salmon Salad
In the Spirit of Valentines Day, I am posting a Tracey Special that I made several weeks back. This dressing is amazing, and you will savor every bite.
This recipe is packed with vitamin goodness! Fresh Cranberries, POM Juice, Olive oil, Avocado, and Spinach.
- 1 (8 ounce package) of Cranberries, rinsed
- 1 Original POM juice you will need 8 ounces
- 4 (4ounces) of Salmon
- 1/4 cup of Balsamic
- 1/2 cup of Olive oil
- 1 Avocado
- Feta Cheese
- Kosher Salt
- 2 Tablespoons of Agave
2½ cups blanched almond flour
½ teaspoon celtic sea salt
½ teaspoon baking soda
1 tablespoon sugar
1 tablespoon of honey
½ teaspoon apple cider vinegar
Combine all dry ingredients.
Next in a medium bowl, whisk the eggs, and then add agave and vinegar
Mix both dry and wet together
Scoop batter into a well greased 6.5 x 4 inch loaf pan (this loaf pan may have been discontinued. Stay tuned...)
Bake at 300° for 45-55 minutes or until a knife comes out clean
Cool and serve
My daughters were craving grilled cheese, so we added thin slices of Tillamook Cheese onto the sliced bread and baked in the oven at 300 for 5 minutes until the cheese was melted!
This Chocolate Chip Cookie recipe is slightly adapted from Elana's Pantry. I figured why really mess with perfection, when she has such a great cookie dough recipe!
3 cups blanched almond flour
½ teaspoon celtic sea salt
½ teaspoon baking soda
½ cup grapeseed oil
1 tablespoon vanilla extract
½ cup yacon syrup/ or agave nectar.. (or you may use 1/2 cup of sugar)
2 tablespoons of Applesauce
1 cup dark chocolate chips 73% cacao
Mix all the dry ingredients in a bowl. And mix all the wet ingredients, then mix all together in a large bowl.
Place cookies on Parchment paper and Bake at 350° for 7-10 minutes
This is an amazing recipe, and my girls love to eat just the dough. Because of this we learned to make a double batch! What I love most is there is no eggs in this recipe, so there are no fears of letting my girls eat the dough.

Lemons, has almost 90% of the daily recommend amount of vitamin-C . Which is amazing for the immune system and fighting free radicals.
Lemons have phytochemicals.
Lemons have a small level of vitamin A, and other flavonoid anti-oxidants such as α and ß-carotenes, beta-cryptoxanthin, zea-xanthin and lutein. Which are all known for being antioxidants. Vitamin A is known to maintain healthy skin and be great for the eyes. Flavonoids help also protect against lung and oral cancers.
Lemons are a good source of B-complex. And contain healthy amount of minerals like iron, copper, potassium and calcium. Potassium in an important component of cell and body fluids helps control heart rate and blood pressure.
Lemons may also reduce your risk for cancers, arthritis, and obesity and coronary heart diseases.
